my first love is food. i eat out entirely too much for my small budget. but i can eat with the best of them. cooking's really not my strong suit. but that hasn't stopped me from trying.

Do you remember how exciting it was as a kid to have your birthday and bring in treats for you class to celebrate?  Even though I was born in June, I got to bring in treats on my half birthday and it was always an ordeal deciding what I wanted to bring.

Now this was the days before it had to be prepackaged food.  My mom would always make the best cupcakes or cookies or cake from scratch and I was always so proud to present them to the class.  My favorite thing she made were what we referred to as “cake cookies.”  They always received the best reviews from the grade school crowd, with kids begging for seconds or thirds.

Her cake cookies are simply cookies made with funfetti cake mix.  They are fluffy and delicious.  Well imagine my surprise when I was in the grocery store a few weeks ago and stumbled upon funfetti mix for cookies!  I knew I had to give them a shot.

I followed the directions on the box, and topped them with funfetting icing and sprinkles.  I couldn’t wait to take a bite.  But unfortunately when I did, I was only met with disappointment.  Expecting to be taken back to my delightful grade school days, where the cookies were soft and chewy, but these cookies were anything but.  Hard and dry is how I would describe them.  Disappointing is a word that comes to mind.

Goes to show you that mother always knows best.
