my first love is food. i eat out entirely too much for my small budget. but i can eat with the best of them. cooking's really not my strong suit. but that hasn't stopped me from trying.

I love fried rice.  I always assumed it would be easy to make, but I probably couldn’t master it as well as I would like.  After all, usually nothing tastes as good as your favorite restaurant’s fried rice.  And well my favorite restaurant’s fried rice is so delicious, I didn’t even want to try and compete.  The restaurant is called Shogun and is a Japanese steakhouse where they cook the food in front of you.  Their friend rice is incomparable.  Seriously the most delicious stuff ever.

Anyways, I came across this handy podcast on iTunes from Start Cooking that had an easy enough friend rice recipe, that I thought I’d give it a shot.  The rice was absolutely delicious.  No it was nothing like Shogun’s but it was easy and flavorful enough that I liked it just the same.  I even made it for my family back home and they all loved it as well.

Fried Rice

* 2 cups of cold white rice
* 1 cup of frozen peas - defrosted
* 2 eggs - beaten
* 1 small yellow onion - diced
* 2 green onions - chopped
* 1/4 cup of oyster sauce
* 2 tablespoons of soy sauce
* 2 tablespoons of canola, peanut or vegetable oil.

On medium temperature, heat 1 Tablespoon of the oil in a large frying pan.  Add beaten
eggs and cook until dry.  Remove from pan and cut into ribbons.  Set aside.

Increase the heat to medium high and add one more Tablespoon of oil to the pan.  Add
diced yellow onion and cook for one minute.  Add rice and cook until heated.  Add sauces, peas, and green onion. Stir until everything is hot.  Add cooked
egg and serve.

Optional cooked extras:  diced shrimp, chicken, pork, or ham
