Baked Potato Soup
Sundays are made for lounging. And eating. Growing up, that was always the day of the week that my family had to be at family dinner. Not that we wanted to be anywhere else, simply because my mom always made the most delicious meals on Sundays. Slaving all day in the kitchen always paid off. Thank God this only happens once a week, right? Because I would not be able to do this 6 more times a week.
Anyways, this past week I decided that I would carry on the tradition and make a nice dinner for myself. Not as hard as those mom usually makes, but it was a nice beginners edition none the less. I had been craving baked potato soup, and decided that would be my first conquest. And my what a conquest it was.
I followed this recipe. It turned out great. Obviously the recipe was a lot bigger than what I can eat by myself, but I froze some of it for later use. Next time I make it, I will cook the potatoes a little longer but that was oven error on my part. I’d never cooked potatoes in it, and didn’t know what to expect.
This soup made for the perfect dinner to go with some football (Bear down, Chicago Bears!) and a cold fall afternoon.
